Fresh Corn & Black Bean Salsa

I love, love, love this salsa. My awesome mom came up with the recipe about 10 years ago and it has stuck with me ever since. It's oh so simple and requires minimal effort! You can serve it as an appetizer with chips, as an entree topping, or as a side to your meal (you'll see in the pictures below that I made lettuce boats with it... highly reccomend). 

Sometimes I will make this on a Sunday or Monday and just snack on it all week long. It actually tastes better the longer it sits, as the flavors have more time to blend. Give it a shot!

Serving Size: 4

What You'll Need:

  • kernels from 3 ears of corn or 1 - 15 oz. can of corn, rinsed

  • 1 - 15 oz. can black beans, rinsed

  • 2 medium sized tomatoes, diced

  • 1/2 cup purple onion, chopped

  • 1 tbsp olive oil

  • 2 tbsp vinaigrette dressing

Directions:

  • In a large bowl, combine all ingredients. Add salt and pepper to taste.
  • Let sit for a minimum of 1 hour before serving. Enjoy!
