The first time I made this pumpkin hummus was back in October. There was pumpkin EVERYTHING on the grocery store shelves and I got just a tad carried away… Okay, I bought enough pureed pumpkin to last a year of Octobers. I mean I made it through October, Friendsgiving, and Thanksgiving and still managed to have leftover pureed pumpkin. Really?
Anyway, after I loaded up on pumpkin I needed to find creative ways to actually use it. I'd heard someone talking about hummus mixed with pumpkin but I had never tried it myself. I figured it would probably be good. And if not good, at least festive. People can appreciate festive. So I made it happen and it was super yummy! The pumpkin flavor is mild, just a sweet little addition... Did I mention it only takes about 3 minutes to make? Ah simplicity, I love you.
So if you've been trying to get rid of leftover pumpkin from the fall, you're welcome. And even if you aren't, you can still find the goods at your local grocery.

What You'll Need:
- 1 can pumpkin puree
- 1 - 15oz. can chickpeas, drained and rinsed
- 1/4 cup tahini
- juice of 1 lemon
- 2 cloves garlic, minced
- 1/4 teaspoon cinnamon
- Throw all ingredients into your food processor or high power blender and pulse until smooth.
- Serve with some pita bread and dig in.
