Simple Squash and Chickpea Rotini Pasta

A super simple veggie pasta - you can never go wrong with it!

I loved how this pasta came together. So simple, cheezy, and delicious.

INGREDIENTS:

  • half package rotini pasta (I used Trader Joe’s quinoa rotini pasta)

  • 1 can chickpeas, drained and rinsed

  • 1-2 yellow squash, diced

  • 1/4 cup + 2 1/2 tablespoons olive oil - divided

  • 2 tablespoons nutritional yeast

  • 1/2 teaspoon onion seasoning

  • 1/2 teaspoon dried basil

  • salt and pepper, to taste

  • fresh basil, for garnishing

DIRECTIONS:

  1. Cook pasta according to directions.

  2. While the pasta cooks, heat 1/2 tablespoon of olive oil in a skillet over medium heat. Add squash and chickpeas to skillet and sautΓ© for 6-8 minutes. Season lightly with salt and pepper.

  3. Once the pasta is done cooking, drain it and return it to the pot. Toss the pasta with the remaining 1/4 cup + 2 tablespoons olive oil and nutritional yeast. Stir in squash and chickpeas.

  4. Add seasonings and fresh basil. Toss well until the pasta is evenly coated with the seasonings. Serve immediately.
