Avocado Toast Two Ways

Do you guys mind if I talk about my morning routine with you today?

Okay, great! Because big news: I AM ENJOYING MORNINGS.

Enjoying them as in I get into bed already looking forward to the morning time. (My mother is probably reading this and thinking that I'm lying - it's true, Mom!)

You see, adoring my morning routine is a bigger deal than you probably think it is. Because I don't do mornings well. At all. We don't mix, y'all. We are (used to be) like two magnets repelling each other, never on the same page and constantly fighting each other.

But as of a few weeks ago, I've decided to call truce with mornings.

I LOVE MY MORNING ROUTINE!

Here's my routine as of late: (times vary) 

  • wake up (this is a great first step hehe ;)

  • drink my warm lemon water/catch up on social media & emails

  • drink another glass of cold water

  • brew a cup of coffee and enjoy it whole-heartedly

  • make avocado toast and devour it

  • get into my workout gear and hit the sidewalk for a 30-45 minute run

  • 15 minutes of weights and floor exercises

  • 10 minute stretch session

By the time I'm getting ready for my work day, I feel like I've already done so much! And while you'd think that this would exhaust you even more throughout the day, it's actually incredibly energizing! 

(Think belting-T.Swift-dancing-in-the-shower-by-9a.m. kind of energy)

Okay, so why in the world did I feel the need to go on so much about my morning routine on an avocado toast recipe? Because I feel like it's the entire reason I love my morning routine and why I established one in the first place!

No joke! (but I am really into food so this makes sense).

Having a delicious breakfast that you love, that is filling, and that is actually really good for you - well, it feels really good. 

This avocado toast TWO WAYS is perfect for the morning time. Mainly because it's super easy to throw together. And you have options!

Even if your preferred morning routine includes running out the door with your breakfast in hand (which I get), then this is still pretty ideal for you. 

Avocado & Tomato Toast: This is typically my go to. I love savory foods and this hits the spot for me every single time. I usually add ground flax seed too, for added health perks. 

It's got a thick layer of avocado, tomato slices, a generous amount of my favorite hot sauce, and red chili pepper flakes. IT'S S'GOOD! 

Strawberry & Balsamic Toast: This is my preference when I've got just a bit of a sweet tooth or if I'm craving something refreshing and "cooling".

This version has a hearty amount of avocado, sweet strawberry slices, chopped spinach, and balsamic vinegar (which I'm obsessed with). 

No matter what breakfast makes you happy, I encourage you to use it as a way to transform your mornings into a time that you really cherish. Because it really has increased the positivity in my life!

Avocado Toast Two Ways
Ingredients
  • 2 slices bread, toasted (I use Ezekiel flax bread
  • 1/2 avocado
  • 1/2 tomato, sliced
  • dash hot sauce
  • to taste red chili pepper flakes
  • to taste salt and pepper
  • 1-2 strawberries, sliced
  • 2-3 spinach leaves, chopped
  • drizzle balsamic vinegar
Instructions
Avocado & Tomato Toast: 1. Layer in the following order - toast, avocado, tomato, hot sauce, chili pepper, salt & pepper. Strawberry & Balsamic Toast: 1. Layer in the following order - toast, avocado, spinach, strawberries, balsamic vinegar
