Do you know what I love most about mornings? Breakfast.

This blueberry muesli bake is the bomb-dot-com. Not only is your house going to smell like a bakery while it's cooking, it's probably one of the easiest breakfast bake muesli recipes you're ever going to get your hands on. Did I mention its super duper delish?

The muesli alone comes packing some serious nutrients: whole grain oats, sunflower seeds, dried blueberries, pumpkin seeds, raisins, almond pieces, and dried cranberries. Um… yes, please!

But wait! This dish gets better! It makes fantastic leftovers. Bake it on a Sunday or Monday morning and enjoy it well into Wednesday or Thursday. Hassle-free homemade breakfast every morning? Sounds pretty ideal to me.

Blueberry Muesli Bake
  • 3 ripe bananas, sliced long ways
  • 1 1/2 cups fresh blueberries
  • 2 cups Nature ValleyTM Toasted Oats Muesli-Blueberry
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon
  • 1/2 teaspoon sea salt
  • 2 cups almond milk
  • 1 tablespoon coconut oil, melted
  • 1 flax seed egg (mix 1 tbsp ground flax seed + 3 tbsp water and let sit for 5 minutes)
  • 1 teaspoon vanilla extract
  • 1/3 cup maple syrup or agave nectar
1. Preheat oven to 375 degrees F. Lightly grease an 11 x 7 baking dish. Arrange the banana slices to lay flat on the bottom of the dish. Then pour blueberries evenly over bananas. Set aside. 2. In a bowl, combine muesli, baking powder, cinnamon, and salt. Mix well. Set aside. 3. In a separate bowl, combine almond milk, flax egg, coconut oil, vanilla, and maple syrup (or agave). Using a whisk, mix until well combined. 4. Now add the bowl with the muesli mixture to the baking dish. Be sure to spread the muesli evenly over the bananas and blueberries. Now pour the milk mixture over the dish evenly. Sprinkle with more blueberries. Bake uncovered for 35 minutes. Serve immediately.
