You guys, stop what you're doing RIGHT NOW and make a cookie crumble parfait!
But for real - if you weren't already planning on making a cookie parfait for breakfast tomorrow, (which you probably weren't since it's come to my attention that most normal folks don't eat dessert for breakfast), then please allow me like 2.5 minutes to change your mind.
THREE important things about this cookie crumble recipe:
1. It's delicious.
2. It's filling.
3. It's healthy.
Oh yeah, and it's also loaded with chia seed pudding, fresh strawberries, bananas, dark chocolate, and generously drizzled with sweet maple syrup. GIMMIE, GIMME!
I know what you're thinking right now... "Hey Cort, you dummy, cookies are so not healthy!"
For the most part this is true, but not all cookies are created equal! You can make and use your own cookies from home (may I suggest these 4 ingredient banana oatmeal chocolate chip cookies).
Or find some healthier store bought options like Ginny Bakes, which I'd like to note are what I used in these photos. They are the bomb and 1000% taste bud approved.

- 2-3 cookies of choice, crushed
- small handful strawberries, sliced
- 1 banana, sliced
- 1 tablespoon dark chocolate, crushed
