Fresh Strawberry Mojito (Non-Alcoholic)

So last weekend at the farmers market I picked up a rather large bunch of mint leaves. Since then, I have been infusing and mint-ifying EVERYTHING. Like, I stayed up until the wee early morning hours Sunday prepping all kinds of detox waters and minty fruit salads. Dave judged me and you might be too, that's okay.

Anyway… This mint frenzy led me to remember how much I love mojitos! Strawberry mojitos, to be specific. They are just the perfect blend - not too sweet, not too bland. Just deliciously refreshing!

This is a beautiful beverage to serve at daytime get-togethers. Serve them pre made on a cute tray for your guests. Or make a fun little "mojito bar" out of it! Set up a station with soda water, lime wedges, sliced strawberries, fresh mint and festive straws. It's party season, after all!

Now this fresh strawberry mojito recipe I have crafted is non-alcoholic. It's a healthy drink that I like to be able to enjoy at noon on a Tuesday. But listen, we're all grown ups here. If you choose to make it a slightly more "adult" beverage, I won't tell.

If you try out the recipe, be sure to share it on social media with the hashtag #projectsunny so I can see your creations. Cheers!

Serving Size: 1

Ingredients:

  • 2 fresh strawberries
  • 5-7 mint leaves
  • 2 1/2 teaspoons agave nectar
  • 1/2 lime, juice of
  • 3-4 ice cubes
  • soda water
  • extra strawberries for garnishing

Directions:

  1. In a tall glass, add strawberries, mint, and agave nectar. Muddle ingredients until well mashed. Be sure to only press the ingredients while muddling. Do not grind them up. (Otherwise you will have little pieces of mint getting stuck in your teeth!). Squeeze in the lime juice. Add ice cubes. Fill the remainder of the glass with soda water. Garnish with a strawberry and enjoy!
