Who's down for a pizza party?

This show stopper of a pizza will have people coming out of the woodworks looking for a bite! I mean, how beautiful is this thing?

Let me introduce you to this healthy, vegan Beet Hummus Pizza... Soon to be your new bestie!

This pizza is made on a whole-wheat, vegan crust. It is then topped with chunky beet hummus, fresh tomatoes, garlic, and a delicate arugula salad. 

I'm all about homemade pizza these days and it's really a walk in the park to do that now, since Trader Joe's has an awesome (and cheap) vegan pizza dough. It's usually stored right next to their beet hummus, which we will also be using in this recipe. #TraderJoesBiggestFan

The great part about having the crust taken care of and ready to go is that you can focus all of your energy on creating a delicious combination of toppings. I find it to be really fun and therapeutic actually!

This particular blend is earthy and sweet, mostly thanks to the beet hummus. There are waves of balsamic vinegar and little kicks of spice from the chili flakes. The arugula topping is just icing on the cake!

I got the idea to put salad on my pizza after our visit to Flora Farms in Cabo. They put so much salad on the pizza you could hardly see it! But I fell in love with it and I'm not sure I'll ever turn back!

Healthy Pizza with Beet Hummus
Ingredients
  • 1 package Trader Joe's whole wheat pizza dough
  • 1 tablespoon extra virgin olive oil
  • 1 - 7 ounce container Trader Joe's beet hummus
  • 4-5 pearl tomatoes, sliced (or your choice of tomatoes)
  • 2 cloves garlic, slivered
  • 1 1/2 cups fresh arugula
  • 1 teaspoon extra virgin olive oil
  • to taste red pepper chili flakes
  • to taste salt and pepper
Instructions
1. Preheat oven to 450 degrees F.2. Roll out your dough onto a large sheet of lightly floured parchment paper. It is best to go ahead and do this on top of the baking sheet that you will be using. Your pizza should be about 8-10 inches in diameter. 3. Using a spoon, spread 1 tablespoon olive oil over the dough. Sprinkle with salt and pepper and chili flakes. Then spoon all of the beet hummus over the dough. Next add the tomatoes and garlic. Add the pizza tray, parchment paper and all, to the oven. Bake for 8-10 minutes. You may want to cook it longer if you like it crispy. 4. While the pizza is cooking, add the arugula to a small bowl. Add the remaining olive oil and a pinch of salt and pepper. Using your hands, toss and massage the arugula until it is slightly wilted and the oil is evenly distributed.5. Re move pizza from oven and let cool for at least 2 minutes. Cut the pizza into slices. Top with the arugula mixture. Serve immediately.
