Two-Step Banana Bread


Two-Step Banana Bread… It sounds too good to be true, right?

Well it sorta is. But not really. You see, to achieve this said banana bread, we're kind of going to be cheating the recipe system...


If you are a bit challenged in the baking department (join the club, I am too), are short on time, or just simply do not have the patience to make banana bread from scratch - then today's post is for YOU!

This super-duper easy banana bread recipe is in huge part thanks to Trader Joe's. (I love TJ's so much btw, it's my grocery store BFF). They have a pre made banana bread mix that's like $3 bucks. All you have to do is add a few ingredients, toss it in a pan, and call it a day. Easy peasy!



The only tricky thing about this pre made mix is that it calls to add vegetable oil (ew) and eggs (double ew). But not to worry my friend, I did some experimenting and have successfully mastered a healthier vegan version of the banana bread STILL using the pre made mix.

I substituted olive oil for the vegetable oil, an easy swap. (You can pretty much substitute any oil you want here).

For the eggs, I created what us in the plant-based community call a "flax egg".

1 flax egg = 1 tbsp flaxseed meal + 2.5 tbsp water

These flax eggs work great as substitutes for real eggs in breads, cakes, cookies, etc. But probably not so well in an omelette... (Not my best joke). 


Okay, so now we've got our mix and our healthy ingredient substitutes - it's time to kick this bread up a notch. Enter: mashed ripe bananas. GENIUS. Just mix them in with the other ingredients, toss the mix in your loaf pan, and get back to your busy life for the next 45 minutes.

By the time this banana bread is halfway through baking, your home is going to smell amazing and your mouth is going to be watering.

Two-Step Banana Bread
  • 1 box Trader Joe's Banana Bread Mix
  • 2 ripe bananas, mashed
  • 1/3 cup extra virgin olive oil
  • 3/4 cup filtered water
  • 2 tablespoons flaxseed meal (for egg replacement)
  • 1/3 cup filtered water (for egg replacement)
1. Preheat oven to 325 degrees F. Oil an 8-inch (9-inch works too) loaf pan and set aside. 2. Add flaxseed meal and 1/3 cup water to a dish and stir. Let sit for 5-15 minutes to thicken. This will be your replacement for the "eggs" the banana bread mix calls for. 3. In a medium bowl, combine all ingredients including your flax seed "eggs". Stir until just mixed. Add the mixture to your loaf pan. Bake for 45-55 minutes or until golden.
