This Vegan Hot and Cheesy Corn Dip is the best dish for get-togethers, tailgates, pot-lucks, etc. Seriously every time I make this corn dip, it gets DEVOURED.

Saying this is an easy-to-make recipe would truly be an understatement.

Preheat the oven, grease a baking dish, give the ingredients a quick toss in a bowl, and then bake. It’s that simple!

I like to garnish this Vegan Hot and Cheesy Corn Dip with fresh cilantro and jalapeños, when I have them. Be sure to serve the corn dip warm (cheesy + warm = fabulous) and with your favorite chips or crackers. I usually go with good ole fashioned tortilla chips, but it’s up to you.

One more thing worth noting - vegan cheese does not always melt the same way regular cheese would. So if you are using a soy/dairy-free cheese and it doesn’t like properly “melted” after baking the cheese dip - don’t worry! That’s normal.

ingredients:

  • 2 cups corn, drained and rinsed if canned or thawed if frozen
  • 1 - 4 ounce can diced green chilis
  • 1/2 cup dairy-free mayonnaise (I used Follow Your Heart brand)
  • 1 - 8 ounce package of dairy-free jack cheese, divided
  • 1/4 cup nutritional yeast
  • cilantro, for garnishing
  • fresh jalapeño slices, for garnishing
  • chips or crackers, for serving

instructions:

How to cook Vegan Hot and Cheesy Corn Dip

  1. Preheat oven to 350 degrees F. Lightly oil a 9-inch baking dish and set aside.
  2. In a mixing bowl, add all remaining ingredients (except for 1/2 cup of jack cheese) and stir until thoroughly mixed.
  3. Now, sprinkle the reserved 1/2 cup of cheese on the top of the dip. Bake for 30-35 minutes or until slightly golden. Garnish with cilantro and jalapeños if desired. Best served warm with crackers or chips!

NOTES:

Something to keep in mind is that dairy-free cheese does not always melt like normal cheese. If some of the cheese still looks "uncooked" after 35 minutes, it is still likely to be done and you can just simply stir the dip to make it blend more.
