CALLING ALL CARB LOVERS! I've got one for YOU today.

Mashed potatoes made from cauliflower... That actually taste like mashed potatoes and not like some weird, gooey non-sense. 

Because for us carb lovers, it's important to find healthy substitutes every now and then. Don't get me wrong, I'm not afraid to eat potatoes. At least not when they are prepared in a healthy way (like being baked). But if I can find a way to substitute my favorite carbs, like fries and hello, mashed potatoes, with something like cauliflower - you bet your butt I'm going to.

Curried Couscous

I've recently discovered a deep love for curry. 

I've spent my entire life thinking that curry was something I hated. Which is really dumb, given the fact that I had never tried it until a couple months ago. (Yes, really). But I mean curry is kind of intimidating, right? It's got a powerful flavor, extreme color, and a super distinct scent. A combination that can be a little frightening when trying something for the first time. 

Luckily, thanks to a Thai joint being across the street from my place and a hankering to try something new, I got a curry dish. And now - I need all the curry things.

Healthy Green Bean Casserole from Scratch

Green bean casserole is *DA BOMB* and you can quote me on that if you want to.

Crispy, creamy, crunchy, savory... I just love this dish so much. Probably more than I love most people. I'M KIDDING! (ish). But I need you to understand the magnitude of my love for this green bean casserole. It's out of this world. 

Growing up, green bean casserole was a staple for our family's holiday dinners. I was obsessed with it even then, as a kid. While most kids hate mushrooms and green beans, there I was, diving in head first. Mom, dad, you're welcome. #GoldenChild.
