This 20-Minute Creamy Vegan Penne Pasta is da bomb. And that’s because it’s creamy without using any actual cream, dairy-wise.

The creamy sauce in this recipe is actually made using dairy-free butter, soy creamer (got it at Trader Joe’s), and nutritional yeast. All simmering together in your skillet while the pasta cooks… which is very efficient, don’t ya think?

I got the idea for this pasta while making myself an iced coffee one morning. I’ve been drinking cold brew lately and have been using the soy creamer from Trader Joe’s (along with stevia drops) to make it tasty. And I was thinking, gee this creamer is nice and thick and I bet it would be a great substitute in a traditional “creamy” sauce. And here we are!

  • cherry tomatoes

  • spinach

  • nutritional yeast

  • fresh basil

  • penne pasta

… pretty simple, right?

The best part about this vegan pasta recipe is that you make the sauce while the pasta cooks. Once the pasta is cooked, just drain it and toss it with the sauce. No time lost. And any weeknight-dinner-warrior knows thats a big win.

ingredients:

  • 8 ounces dry penne pasta
  • 2 tablespoons dairy-free butter
  • 3 cloves garlic, minced
  • 1 1/2 cups cherry tomatoes
  • 2 cups fresh spinach
  • 1/2 cup soy creamer (or any unsweetened non-dairy cream)
  • 1/4 cup nutritional yeast
  • 1/4 cup fresh basil, julienned 
  • salt and pepper, to taste

instructions:

How to cook 20-Minute Creamy Vegan Penne Pasta with Spinach, Tomatoes, and Herbs

  1. Bring a large pot of water to a boil and cook pasta according to directions.
  2. In a large skillet, add the butter and melt over medium heat. Once melted, add the garlic. Let simmer until fragrant, about 1 minute.
  3. Add tomatoes, cover and cook - stirring occasionally - until the tomatoes are tender. This should take about 5-7 minutes. Season with salt and pepper. 
  4. Stir in spinach until wilted. 
  5. Add creamer, nutritional yeast, and basil. Stir until everything is well combined. 
  6. Once cooked, drain the pasta and toss into the creamy sauce mixture. Let simmer for another 2-3 minutes. Season with salt and pepper, top with more fresh basil if desired, and serve!
